Recently, Ms. Taylor's Honors Anatomy and Physiology Class dissected chicken thigh quarters. Students observed the bones and ligament attachments of the skeletal system and the muscles and tendon attachments of the muscular system.  They also observed the skin, blood vessels and nerves of the chicken.  Following the dissection, student groups constructed and presented a model of a joint (shoulder, elbow, hip or knee). The joint model included the bones, 4 ligaments and 3 muscles with the correct origin, insertion and action for each muscle.
